1. Rinse rice until water runs mostly clear. 2. Cook the rice, then let it sit covered for 10 minutes. 3. Warm the vinegar, sugar, and salt together until dissolved. 4. Pour the vinegar mixture over the hot rice. 5. Gently mix the rice and allow it to cool to room temperature. 6. Lightly spray an ice cube tray with avocado oil or a neutral oil. 7. Line the tray with plastic wrap. 8. Add a layer of smoked salmon and avocado into each compartment of the tray. 9. Add a layer of cucumber on top of the salmon and avocado. 10. Pack in the sushi rice tightly into each compartment, pressing down firmly. 11. Flip the tray onto a board and remove both the tray and plastic wrap. 12. Drizzle with unagi sauce or teriyaki sauce and sriracha mayo. 13. Top with chopped green onions and fried onions. (optional)
