1. Cook rigatoni in salted water and save a little pasta water. 2. In a pan, heat olive oil and add tomatoes with cut side down, onion, garlic, and tomato paste. Cover and cook for about 5 minutes. 3. Add ground beef to the pan and press it flat. Leave for 4-5 minutes to brown. 4. Break up the beef and mash the tomatoes. Add all the seasoning. 5. Stir in mozzarella and add a splash of reserved pasta water. 6. Add the cooked pasta to the pan and toss everything together. 7. Serve the dish topped with Parmesan and fresh parsley, if desired.
