Ingredients Kebabs * 2 lb ground beef * 1 onion, finely diced * 1 red bell pepper, finely diced * 1 tsp fresh parsley * 2 tsp table salt * 1 tsp black pepper * 1 tsp red pepper * 1 tbsp paprika * 1/4 tsp ground cumin * 1-2 bags of shredded mozzarella cheese * 6 lavash breads or tortillas Garlic Yogurt * 1 cup plain yogurt * 1 tsp garlic powder * pinch of salt * 1 tsp lemon juice --- 🔪 Instructions 1. Preheat Preheat oven to 425°F (220°C). ⸻ 2. Prepare the meat In a large bowl, combine: * ground beef * onion * red bell pepper * parsley * salt, pepper, red pepper * paprika + cumin Mix thoroughly until fully combined and slightly sticky. ⸻ 3. Assemble kebabs 1. Lay out lavash breads or tortillas 2. Spread a thin, even layer of the meat mixture across each 3. Roll tightly into logs 4. Slice into 1.5–2 inch (4–5 cm) pieces 5. Thread onto 12-inch (30 cm) skewers ⸻ 4. Bake & crisp Place skewers on a parchment-lined tray: * Bake 10–15 minutes (bottom gets crispy) * Flip skewers * Bake 5–10 minutes more * Broil on HIGH 2–3 minutes or until edges are deeply browned 👉 Crispy outside, juicy inside ⸻ 5. Make the garlic yogurt While the kebabs cook, mix: * yogurt * garlic powder * pinch of salt * lemon juice 👉 Let sit 10–15 minutes to mellow (fridge) ⸻ 6. Serve 1. Spread yogurt on a plate 2.
