A simple and elegant take on sushi with layers of cold smoked salmon, cream cheese, avocado, cucumber, and sushi rice, pressed into a delicious square. No rolling or baking required, this recipe is perfect for impressing guests or for a tasty dinner.

1. Rinse the sushi rice until the water runs clear. Cook with water by bringing it to a boil, then covering and reducing to low heat for 15 minutes. Let sit covered for 10 minutes. 2. Mix rice vinegar, sugar, and salt until dissolved. Fold this mixture gently into the warm rice and let it cool slightly, ensuring it's warm but not hot. 3. Stir together the mayo, sriracha, and soy sauce. 4. Lightly oil or line a 9x13 inch glass dish with parchment. Layer the cold smoked salmon to cover the bottom fully, then spread a thin layer of cream cheese, followed by slices of avocado and cucumber. Press the sushi rice down firmly and evenly to compact it. 5. Chill the mixture for 20-30 minutes. 6. Place a cutting board on top of the dish, flip it confidently, and lift off the pan, leaving the smoked salmon on top. 7. Use a sharp knife to slice the sushi squares, wiping the knife between cuts. Sprinkle sesame seeds or green onions on top as desired, and serve with soy sauce and nori sheets for wrapping.
