1. Cook the Filling: a. Heat a large skillet over medium heat. b. Add diced onion and cook until softened. c. Add ground beef and cook, breaking it apart, until browned and fully cooked. d. Stir in taco seasoning and tomato paste. e. Cook 1–2 minutes until evenly combined. f. Remove from heat. 2. Assemble the Wraps: a. Lay a small tortilla flat. b. Sprinkle mozzarella over one half. c. Add a scoop of beef mixture. d. Top with more mozzarella. e. Fold the tortilla in half to seal. 3. Cook Until Crisp: a. Place folded wraps into a preheated skillet over medium heat. b. Cook until golden brown and crisp on both sides. c. Remove and let rest briefly before serving. Serve warm with creamy jalapeño sauce, hot sauce, or guacamole. Finish with lime and cilantro if desired. Note: For a lighter option, cook in the air fryer or oven. Lightly spray or brush both sides with avocado oil and cook until golden and crisp.
