What you need

tbsp olive oil

tsp black pepper

cup sundried tomatoes

box chicken pieces
cup orzo

cup coconut milk

cup parmesan cheese

bunch fresh spinach

clove garlic clove

cup chicken broth

tsp kosher salt
Instructions
1. Heat olive oil in a large, deep skillet over medium-high heat. 2. Add Beyond Chicken pieces and cook for 3–4 minutes until heated through and lightly browned. 3. Add garlic, sun-dried tomatoes, Italian seasoning, salt, and black pepper. Cook for 2–3 minutes until fragrant. 4. Add orzo and chicken broth. Stir well to combine. 5. Reduce heat to medium, cover, and cook until orzo is al dente (about 10 minutes). Stir occasionally to prevent sticking. 6. Stir in coconut milk (or heavy cream) and parmesan cheese until creamy and combined. 7. Remove from heat, then add spinach and stir until just wilted from the residual heat. 8. Plate and finish with extra parmesan on top.
