Crispy Potato Egg Omelette Ingredients 1 potato, peeled 2 eggs Mozzarella cheese Avocado oil Salt and pepper Fresh parsley, chopped Hot honey, optional Instructions Peel the potato, then use the peeler to shave the whole potato into thin strips. Heat a pan over low-medium heat and add a little avocado oil. Add the potato strips, spread evenly, and season with salt and pepper. Cook until the bottom gets nice and crispy. Flip the potato layer and season again lightly with salt and pepper. Whisk the eggs with salt and pepper, then pour over the potato. Let it cook, then flip again. Add mozzarella cheese, fold it over, and flip once more until melted and golden. Finish with fresh parsley and a drizzle of hot honey if you want.
