Mini Rustic Blueberry Galette

Instead of topping up one single layer of puff pastry, cut it into 4-6 equal size pieces and follow the instructions as given below. What you need

cup vanilla ice cream

tsp vanilla extract
tbsp cornstarch

cup honey

tsp lemon juice

puff pastry
egg
cup fresh blueberries
Instructions
Preheat the oven to 380 degrees F. In a medium bowl, combine the blueberries, honey, cornstarch, lemon juice, and vanilla. On a floured surface, roll the puff pastry out into a rectangle about 1/4 inch thick. Place the pastry on a parchment lined baking sheet and place the blueberries over the pastry, leaving a 1 inch border. Fold the edges up and over the blueberries. Now, brush the edges of the pastry with egg and sprinkle with sugar. Transfer over to the oven and bake for 25 - 30 minutes or until golden brown. Let cool for a little bit and serve with vanilla ice cream. Enjoy!View original recipe
